Barefoot Jocelessa



I love watching the Barefoot Contessa. She can make even pig meat look like it tastes delicious. So after I saw her Pasta Alle Melenzana episode I made it for me and the Blake. The eggplant was... interesting, but overall the dish was tasty. Not as tasty as the guac bean burgers I have been making (http://www.eatingwell.com/recipes/bean_guacamole_burgers.html) for almost every one of my alone-meals, but both me and the Blake emerged from the meal with full bellies. And that, as everyone who has ever fed hollow-leg Blake knows, is quite a feat!
